1 pck. Bourbon vanilla sugar
100 ml Cooking oil
125 ml Buttermilk
2 Eggs

FOR THE DECORATION
100 g Dark chocolate
50 g dried banana chips

Instructions

  1. Preheat oven to 180 degrees (convection: 160 degrees). Line the muffin tray with muffin cups. Peel bananas, halve and cut into slices. Crush half of the discs with a fork.
  2. Mix flour with cocoa, baking powder, sugar and vanilla sugar in a bowl. Add oil, buttermilk (alternatively you can also use cream), eggs and banana puree and stir for 2 minutes on high speed with the mixer. Finally, fold in banana slices and spread the dough over the 12 muffin hollows. Bake for approx. 25 minutes. Allow to cool completely.
  3. For decoration, coarsely chop couverture. For example, set aside the couverture for garnish. Melt the remaining couverture in a bowl over the water bath and spread over the muffins with a teaspoon. Coarsely chop banana chips. Decorate with chopped couverture and banana chips.
